DATES, BROWN SUGAR, PECANS, DRIED FIGS
A sip of the coffee fills your mouth with a smooth, rich texture, and the syrupy coffee rushes in. Then, a rich, dark pecan aroma lingers on your nose, blending with a strong sweetness reminiscent of brown sugar or dates. The rich flavor persists even after cooling, allowing you to savor the experience until the very end.
Brazilian Serra Negra is a rich, densely flavored coffee that can be enjoyed hot or cold, making it perfect for this season. It will warm your heart chilled by the cold spring weather and energize you like an iced Americano with syrup on a hot midday.
BUILDING THE QUALITY OF COFFEE
The Seja Negra farm was developed by Bechina Paiva, a female producer who inherited the farm from her father and transformed it into a specialty coffee farm, winning first place in the 2024 Best Mountain Cup. Bechina values detail and precision in producing exceptional coffee.
This coffee isn't dried by spreading out the cherries evenly and thinly from the beginning. First, only ripe, high-sugar cherries are selected and stacked 30-40 cm high. This slows the drying process and promotes more active microbial fermentation. Only when the cherries reach a temperature of 38°C (100°F) due to fermentation are they spread out thinly and dried.
This coffee undergoes a unique fermentation process compared to typical Brazilian natural coffee. Experience the difference in flavor, and you'll discover yet another way to enjoy this coffee.

What is the best consumed date for coffee beans? Are your coffee beans freshly-roasted?
We recommend 7-21 days after the initial roasting date to allow for degassing to take place, allowing the flavour of the coffee compounds to be properly extracted. Within the first seven days, roasted coffee beans are still releasing carbon dioxide and degassing. If not degassed properly, it will hinder the extraction of ground coffee particles during the brewing process.

Single origin beans are harvested from a single producer, crop, or region, usually delivering a taste profile that is unique to its origins. Blends are a mixture of a few single origin beans, producing a rich and expressive flavor profile.
How do I choose coffee that is suitable for me?
Find the right tasting notes. These are often identified by our barista during cupping sessions. Some coffee are more floral and fruity while some are more chocolaty and nutty. As you drink more coffee, you will figure out which notes you would like the most.
