On a warm, sunny spring day, a gentle breeze blows through the park as I cycle. I pause on a bench and sip a refreshing peach drink, quenching my thirst. The fresh scent of peach mingles with the sweetness of purple flowers and fruits like lavender and blueberries.
Grown in the Bensa region of Ethiopia, this coffee is grown at particularly high altitudes, between 2,380 and 2,480 meters, resulting in smaller, firmer beans than other coffees. Like a concentrated bean, each sip of coffee releases vivid, colorful floral and fruity aromas.
THE LAST BENSA SERIES
From January to March, we've been introducing a coffee from the Bensa region of Ethiopia, one each month. The final coffee in the Bensa series is now available: Miriga Natural Coffee. This coffee is produced by Tamiru Tadese, the producer of Alo Coffee, who also produced the Alache Washed Coffee introduced in January. It was produced at the Miriga Washing Station, a coffee processing plant specializing in natural processing.
I'm grateful for the enthusiastic customer response to the Bensa series, which we've been introducing over the past two months. To introduce it to you again, I traveled to Ethiopia again in February. I look forward to introducing you to the Bensa region's coffees, which convey the beautiful aromas and mood unique to this region.
This month, we're featuring two interesting Ethiopian coffees, along with coffees from the Bensa region. If you enjoyed these, we encourage you to also compare them with Ethiopian Laresa, a naturally processed coffee fermented in an anaerobic environment, a rare find even in Ethiopia.
PLEASE GRIND IT A LITTLE COARSER
While naturally processed coffees often brew relatively quickly, these beans are extremely hard, producing a lot of fine particles during grinding, which tends to slow down the brewing process. This is a natural phenomenon, so there's no need to deliberately speed up the brewing time. In fact, you'll experience a smoother texture and sweeter flavor.
However, to avoid the coffee becoming too strong, we recommend adjusting the grind to a coarser consistency than your usual Ethiopian coffee or Velvet White. If the brewed coffee feels too strong, add 20g of water to reduce the strength. This will allow you to enjoy the elegant and complex floral and fruity aromas of this coffee.

What is the best consumed date for coffee beans? Are your coffee beans freshly-roasted?
We recommend 7-21 days after the initial roasting date to allow for degassing to take place, allowing the flavour of the coffee compounds to be properly extracted. Within the first seven days, roasted coffee beans are still releasing carbon dioxide and degassing. If not degassed properly, it will hinder the extraction of ground coffee particles during the brewing process.
What are the differences between Single Origins and Blends?
Single origin beans are harvested from a single producer, crop, or region, usually delivering a taste profile that is unique to its origins. Blends are a mixture of a few single origin beans, producing a rich and expressive flavor profile.
How do I choose coffee that is suitable for me?
Find the right tasting notes. These are often identified by our barista during cupping sessions. Some coffee are more floral and fruity while some are more chocolaty and nutty. As you drink more coffee, you will figure out which notes you would like the most.
