In the past, Peruvian coffee was often criticized for its unstable quality. While well-grown green beans are important, processing methods are also an important factor in determining the quality of coffee. However, most Peruvian farmers have not received education on processing methods.
Recognizing this, Falcon Coffees, a UK green coffee company, opened a small warehouse and quality control (QC) lab in a village where coffee is grown. Producers, who had never before tasted their own coffee, are now conducting research and even directly adjusting prices.
In 2021, Senior Researcher Derek anticipated the development of Peruvian coffee in the BB Letter "Discovery of Peruvian Coffee." Two years later, Domingo Aguilera brings a rich sweetness from the aroma. When you take a sip, it feels like a small piece of chocolate slowly melting on your tongue. What is the best consumed date for coffee beans? Are your coffee beans freshly-roasted?
We recommend 7-21 days after the initial roasting date to allow for degassing to take place, allowing the flavour of the coffee compounds to be properly extracted. Within the first seven days, roasted coffee beans are still releasing carbon dioxide and degassing. If not degassed properly, it will hinder the extraction of ground coffee particles during the brewing process.
What are the differences between Single Origins and Blends?
Single origin beans are harvested from a single producer, crop, or region, usually delivering a taste profile that is unique to its origins. Blends are a mixture of a few single origin beans, producing a rich and expressive flavor profile.
How do I choose coffee that is suitable for me?
Find the right tasting notes. These are often identified by our barista during cupping sessions. Some coffee are more floral and fruity while some are more chocolaty and nutty. As you drink more coffee, you will figure out which notes you would like the most.
