There is a farmer named Elvira Aya on a farm in La Montanya, Colombia. Contemplating how to produce high-quality specialty coffee, she decided to freeze the green beans in processing for a certain period of time after several attempts. What she learned after experimenting with different varieties was that bacteria and yeast that work at low temperatures produce different results than those that work at temperatures above 20 degrees Celsius. In the case of coffee with a floral scent, such as geisha or pink bourbon, applying Ice Fermentation has the effect of emphasizing the floral scent and body.
